Padma Lakshmi Shares Her Favorite Healthy Summer Cucumber Recipes

Padma Lakshmi was a guest on The Today Show to share three of her favorite healthy recipes that she eats all the time. Padma uses just four ingredients -- English cucumbers, non-fat plain yogurt, sea salt and mint -- to whip up three different dishes. Padma makes a chilled cucumber soup, with yogurt, mint and cucumber blended in a blender. She likes to eat it chilled and keeps a pitcher of it in it in the refrigerator. She always drinks a cup of it before she goes out to a fancy dinner party so she will eat less.

The next recipe calls for shredded cucumber mixed with chopped mint. She adds it to drained yogurt to make tzatziki sauce. She then poaches salmon fillets in a mixture of white wine, water, lemon and spices (rosemary or tarragon). She serves the yogurt sauce with the salmon. For a fun and healthy dip, she takes the plain tzaziki sauce and adds spices, garlic and bell peppers. Take a look:
