Chef Marcus Samuelsson talked with The Today Show about his favorite comfort foods. They're all Swedish -- because that's where he grew up with his adopted parents. Marcus loves meatballs, and his always looked delicious on Top Chef Masters. Marcus likes to make his meatballs
with beef, veal and pork. The gravy is simple with cream, chicken stock and spices. He also likes
pickles and ligon berries, both of which are traditional items on the Swedish table. His favorite side dish with meatballs is a rich dish of
mashed potatoes. He says that dish means home to him.
Swedish food has a lot of
pickling and preserving.
He loves curing his own
