Video: Mark Bittman Recreates Recipes from Noma, the Best Restaurant in the World Winner

Mark Bittman of The New York Times stopped by the Today Show to share some recipes for recreating food from Noma in Copenhagen, Denmark. Noma, which has only twelve tables, won the 2010 title of the best restaurant in the world. The designation was made by the San Pellegrino World's 50 Best Restaurant awards. The cuisine is Nordic and locally sourced. The restaurant's book is Noma: Time and Place in Nordic Cuisine by Chef Rene Redzepi and Mark has adapted some of the recipes, which are quite unusual but very interesting. Chef Redzepi used to cook at one of America's best restaurants, French Laundry, and is widely regarded as one of the most innovative chefs in the world. Take a look:
