Rare Football-Sized Cacao Beans Rediscovered in Ecuador
CBS News reports that a rare cacao has been rediscovered in the wilderness of Ecuador. The rare cacao beans were thought to have been lost to the world forever. They grow on trees called The National Cacao. The white cacao beans on the trees are football-sized. They are said to produce the purest expression of national cacao on Earth. Chef Michelle Tampakis, a Senior Pastry Instructor at The Institute of Culinary Education, says the cacao is not bitter at all. This means wonderfully delicious chocolate can be made from them.
