Saveur Magazine Editor James Oseland Predicts the Top Food Trends for 2012
James Oseland, the Editor in Chief
of Saveur magazine, stopped
by The Today Show to share his
predictions for the hot food
trends of 2012 with Matt Lauer. James,
who is well known to fans
of Top Chef Masters for his
unique style of judging,
says that meatloaf
will be the comfort
food of 2012. But this
meatloaf will be
international, and have
lots of interesting twists.
Last year it was all about Japanese ceramic knives. In 2012 it's all about a great carbon steel
knife. A good set
will last
you a lifetime.
Classic Italian American
food will be hot, such as
lasagne and eggplant parmigiana .
Macarons were big for
2011, but layer cakes
are what's in for 2012 for desserts.
He says 2012 is the return
of the year of the classic layer cake
and the end of the cupcake (we'll believe this one when we see it).
Hot wines for 2012 are regional American wines made outside
of California. The hot food city for 2012
will be Kansas City. It takes the hot food city title over from Portland. Take a look:
